"Fingerfoods and Fumbles" - WHO WILL WIN this years' SUPER BOWL Game?

Super Bowl XLII - Sunday, February 3, 2008
New England Patriots vs. New York Giants

Super Bowl Sunday is as much about the commercials as it is about football. If you find yourself LOST watching too many commericals or too much football, check out Pizza and Pajamas pizza links for additional entertainment!

According to Dominos pizza facts, Super Bowl Sunday is the biggest pizza selling day of the year. Pizza has evolved from an Italian peasant snack into one of the world's favorite foods. Super Bowl Sunday is evidence of this - as is any "trash day" in America. Pizza is shared and celebrated in boardrooms, college dorm rooms, school classrooms (math), fundraising events and many other venues. Pizza has become more American than mom's apple pie! A top favorite pizza topping is pepperoni. But today, more and more, traditional pizza toppings are giving way to many personalized and thematic pizzas relating to entertaining.

Pizza and Pajamas has created two such pizza recipes.
For Tom Brady's, New England Patriots, please consider Pizza and Pajamas "Clam Bake Pizza". And, Eli Manning's, New York Giants, a simple, traditional "New York Style Cheese Pizza".

All pizzas can start with the Perfect Pizza Crust or dough from one of your favorite pizzerias or local supermarket.

NEW ENGLAND PATRIOTS - "Clam Bake Pizza"
by Chef Aimee Bourque

2 ea 14 oz cans of diced tomatoes, liquid drained and reserved
2 tbsp tomato paste
3 ea garlic gloves, finely chopped
1/2 ea small onion, finely diced
1 1/2 tbsp sherry vinegar
1 ea 16 oz container of ricotta cheese
salt and pepper, to taste
25-30 ea mussels
1 ea link of chorizo (about 6 inches), sliced
2 tbsp parsley, chopped
1 tbsp crushed red pepper flakes

Method:
Heat oil in a sauce pan over medium heat. Add onion and garlic when hot and cook for about 2 minutes. Add tomato paste and stir together with onions and garlic. Add diced tomatoes and sherry vinegar and simmer for about 10 minutes. Season with salt and pepper. Heat reserved tomato juice in a pan (add a little bit of water if necessary). When water is simmering, place cleaned mussels in the pan and cover. Cook until the mussel shells are open. Remove from heat and cool until they are not to hot to handle. Once cooled, remove mussels from the shells and reserve for assembly. Roll or stretch dough out to the desired thickness. Place on oiled sheet tray. Add the mussels to the tomato sauce and spread onto the dough. Place chorizo slices on top and add the ricotta cheese in little "dollops" on the pizza. Bake at 450 degrees for about 20-25 minutes. Remove from oven and sprinkle with chopped parsley and crushed red pepper flakes.

NEW YORK GIANTS - "Easy Cheese Pizza"

1 - 28 oz jar - favorite tomato or pizza sauce
3 cloves garlic minced
1 1/2 teaspoons dried oregano
3 cups (or more) shredded mozzarella cheese
1/3 cup grated parmesan cheese

Method:
Roll out and stretch the pizza dough, lay on a corn-meal dusted or lightly oiled pizza pan. Top dough with pizza sauce. Sprinkle minced garlic and dried oregano evenly over the sauce. Then add shredded mozzarella and grated parmesan cheese. It is important that pizzas bake quickly and in a very hot oven -- usually 10-15 minutes until crust is golden. Baking times will vary according to oven temperatures. If desired, sprinkle finished slices with crushed, dried red chili pepper.
